Hi, I have never tried to make this jam with dried apricots and I think if you'd like to do so, you'd probably have to first rehydrate the apricots before making the jam. I'm not sure what the results would be. Perhaps you could try on a smaller amount to see how it sets and what the taste is like before making a bigger batch. I hope that helps!

Hi! If the jars are sealed properly, the jam will last a full year. Technically, it will last even longer than that, but the colour will change. It will darken. The flavour will also change. It won't be bad, but it won't be the same. Hope that helps!

You put so much time and effort into this blog alone, not to mention other aspects of your life... it's time to be proud of what you're able to accomplish!

This jam looks absolutely lovely, despite your little blooper with unripe fruit. Love the additions of honey and tea... Some of my favourites things to combine with apricot.

I often become super frustrated when things don't work out the way that I want them to! In the end though it looks like everything turned out OK here - the jam looks great! And kudos to you for remembering anything about Latin...
