So the ratio of fruit to sugar is 1:1 by weight.

What about water to fruit? If using the sliced fruit method?

And does cooking larger amounts of fruit (kilos) change the ratios?

Thank you so much for such an informative article! I've been making jams, jellies and chutneys for years but good marmalade always eluded me. I now know why my ribbons of peel were always chewy and I could almost slice the marmalade!
I'm very happy and grateful to report that I made a batch of Seville orange marmalade very recently using your recipe and it was a resounding success!
