Hi! I think your best bet might be a restaurant supply store. They generally have bakeware in all sizes that are not the typical sizes homebakers use. I've gotten larger cake pans at a local restaurant store, for example. Prices are generally better than Amazon too. For tarts, professionals may use ring moulds set on a silicone-lined baking sheet, so you may end up finding tart rings as opposed to full pans with a bottom. Hope that helps!

Worked very well for me . I wondered how I would get paper out but it did work well with no problem, It was worth a try.

What pastry professionals do is the following: they first remove the fluted ring. Then they slip one of those cardboard cake rounds between the flat bottom and the cooled tart and slide it right onto the board. Eventually, they may glue down the tart shell to the board using a little glucose (by the way). This way the tart shell can't slide right off the cardboard because those cardboard rounds are slippery!

This was my question EXACTLY!! Right now I use a large, long frosting spatula, with the rounded end and slide that gently under the tart to loosen it from the bottom and slide it onto a plate EVER so gently. But I would love to know if there is a tried and true trick out there that I don't know about! Please enlighten us, anyone?!

I'm using an America's Test Kitchen recipe, and it said nothing about greasing and flouring the pan. Here's hoping it all works.
