Thanks for such a thorough, honest review of the recipes you tried out. I appreciate the tip about chia too! I've only used xanthan gum once and what I've read about it makes me squeamish. Finally, when it comes to parting with cookbooks I managed to do it by giving some away to friends when I was moving. That made the culling process less painful.

I haven't found many gluten-free recipes that actually taste good. That cake looks surprisingly delicious!
