I found the finished pie to be a bit too sweet with the delicate flavors. Don't get me wrong, though; it was still a very good pie! I am looking forward to using a red next time because there will be a next time.
I can't throw out anything good and will find a use for the poaching liquid. Do you reuse the poaching liquid in anything? I'm thinking the easiest use would be to reduce it and add to sparkling water or use as a cake syrup. Any suggestions?
